The secret to a great steak at home is starting with great beef. Villa Market's butchery carries imported beef from the United States, Australia and Japan — choose a well-marbled ribeye and let the pan do the work.

Method

  1. Take the steaks out of the fridge 30 minutes before cooking. Pat dry and season generously with salt.
  2. Heat a heavy pan until very hot. Add a little neutral oil and sear the steaks for 2–3 minutes per side without moving them.
  3. Lower the heat, add the butter, garlic and herbs. Tilt the pan and spoon the foaming butter over the steaks for 1–2 minutes.
  4. Cook to your liking (about 52–54°C inside for medium-rare).
  5. Rest the steaks on a board for 5–8 minutes, then slice against the grain and finish with pepper and flaky salt.

Which beef should I choose?

  • US beef — bold, beefy flavour; ideal for a classic sear.
  • Australian beef — versatile and consistent; great for grilling.
  • Japanese beef — very fine marbling; cook thinner slices quickly and serve in smaller portions.
